500g new potatoes (thick slices)
1 white onion (chopped)
150ml olive oil
3 tablespoons (tbsp) of parsley
6 eggs (whisked)
Frying pan, spatula, bowl, colander
- Pour the olive oil into the frying pan.
- Fry the potatoes and onion for about 25 minutes.
- Strain the mix in a colander then place in a bowl.
- Add the eggs, season with salt and pepper and return to the frying pan.
- Use a plate to turn the omelette twice.
